Why do people keep asking for evidence of Jesus, when there are walking epistles everywhere?

It's sad, but I am afraid that there are many who will face Jesus, be in His very presence, knowing who He is, and still reject Him. That is their decision. Don't let it get you upset, just keep your focus on Jesus. And keep praying for the ones who still do have a chance to accept Him. The time is near, thank God, but there are still many in the valley of decision.
